Yanpi dumpling is a well-known region specialty of FuJian
Province, across the strait from Taiwan. The skin of the dumpling made of
yam. Fillings are ground pork with spring onion. Normally Yanpi dumplings
are very delicate and only bite sized. Pin made some of them super sized,
like the meatballs her grandmother used to make. They are contrasted with
fine silky noodles, Chinese baby green, and wood ear mushroom to give a
